Carrot-cinnamon Marmalade

Total Time: 45 hrs 10 mins Preparation Time: 10 mins Cook Time: 45 hrs

Ingredients

  • 4 cups carrots, grated (you can use a food processor)
  • 4 cups orange juice
  • 1 lemon, juice of
  • 3 cups sugar
  • 1 teaspoon cinnamon

Recipe

  • 1 cook carrots in orange juice over moderate heat for 30 minutes.
  • 2 add sugar and cinnamon. stir thoroughly and cook until thick.
  • 3 ladle into hot, sterilized jars and seal.
