Celestial Oatmeal Cookies

Ingredients

• 1 cup sugar
• 1/2 cup canola oil mayonnaise (spread)
• 1 cup canned pumpkin
• 1 egg
• 1 teaspoon orange zest
• 2 cups oats, uncooked
• 1 cup all-purpose flour
• 1 teaspoon ground cinnamon
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 cup chopped pitted prune
• 1/4 cup chopped walnuts
• 1/2 cup powdered sugar
• 1 tablespoon orange juice

Recipe

• 1 beat sugar and oil in large bowl until well blended; add pumpkin, egg and orange peel and beat well.
• 2 add combined oats, flour, cinnamon, baking soda and salt, stir well.
• 3 fold in prunes and walnuts.
• 4 drop by tablespoonfuls about 2 inches apart onto cookie sheet lightly coated with cooking spray.
• 5 bake at 350 degrees 11-13 minutes or until lightly browned.
• 6 cool completely, then drizzle glaze in strips. (blend powdered sugar and orange juice to make glaze).
