- 2 lbs carrots
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1 teaspoon salt
- 1 cup light cream
Recipe
- 1 preheat oven to 400°f.
- 2 cook peeled carrots until soft.
- 3 place in food processor; add remaining ingredients and process until smooth.
- 4 bake for about 30 minutes.
