Carrot Souffle

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 lbs carrots
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 cup light cream

Recipe

  • 1 preheat oven to 400°f.
  • 2 cook peeled carrots until soft.
  • 3 place in food processor; add remaining ingredients and process until smooth.
  • 4 bake for about 30 minutes.
