Chili Sauce (homemade)

Total Time: 1 hr 45 mins Preparation Time: 15 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 10
  • 1 cup apple cider vinegar
  • 1 vidalia onion, chopped
  • 1 garlic clove, minced
  • 1 green bell pepper, chopped
  • 1 cup celery, chopped
  • 2 (28 ounce) cans crushed tomatoes
  • 1 cup honey
  • 2 teaspoons salt
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon clove, ground
  • 1/2 teaspoon cayenne pepper, ground

Recipe

  • 1 add all ingredients to heavy pot.
  • 2 bring to a boil.
  • 3 reduce to a simmer and let cook for 1 hour.
  • 4 add ingredients to a blender and blend until smooth.
  • 5 return to pot and simmer for 30 minutes more.
  • 6 enjoy.

Baked Sweet Potatoes

Ingredients

  • Servings: 8
  • 8 medium sweet potatoes, with skin (8 ounces each)
  • 1 cup milk
  • 1 teaspoon vanilla
  • 3 tablespoons sugar
  • 1/4 cup butter
  • 1/4 teaspoon cinnamon, ground
  • 1/8 teaspoon nutmeg, ground
  • 1 tablespoon orange juice
  • 4 cups small marshmallows

Recipe

  • 1 heat oven to 350 degrees. bake potatoes until knife-tender, 1 1/2 hours.
  • 2 leave oven on.
  • 3 let potatoes cool slightly. peel; place in bowl. beat until smooth.
  • 4 heat milk in small saucepan to boiling.
  • 5 add vanilla, sugar and butter.
  • 6 stir cinnamon, nutmeg and orange juice into potatoes.
  • 7 stir in milk mixture until smooth.
  • 8 coat 12x8x2" baking dish with cooking spray.
  • 9 spread half the potatoes in bottom.
  • 10 layer 2 cups marshmallows over potatoes.

Capirotada

Ingredients

  • 6 small piloncillo cones
  • 12 cups water
  • 8 short cinnamon sticks
  • 2 bunches green onions or 1 large onion, cut in quarters
  • 3 loaves french bread, sliced thin
  • 2 (16 ounce) containers soft margarine
  • 1 (16 ounce) box raisins
  • 2 cups chopped pecans
  • 4 cups cheddar cheese, shredded

Recipe

  • 1 combine water, piloncillos, cinnamon sticks and green onions in large pot or dutch oven.
  • 2 bring to a boil and cook until the piloncillos are dissolved and the syrup is dark from the spices.
  • 3 taste- you may want to add additional brown sugar or spices depending on your personal tastes.
  • 4 remove from heat and take out onions and cinnamon sticks.
  • 5 toast the french bread (you can do this ahead of time or while the syrup is cooking).
  • 6 spread margarine liberally on both sides of toast.
  • 7 layer toast, cheese, raisins, and nuts in 2 9x13 pans (preferably glass), repeating until both pans are full, ending with a layer of cheese, raisins and nuts.
  • 8 pour the syrup over the top, dividing evenly between both pans, and making sure that all the bread is moistened.
  • 9 bake in a 350 degree oven for 30 to 40 minutes.
  • 10 serve hot or cold.
  • 11 store in the refrigerator.

  • 1 1/4 cups packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

  • 2 (2 1/8 ounce) snickers candy bars, chopped

  • 2 beat in egg and vanilla.
  • 3 combine the flour, baking powder, baking soda, cinnamon and salt; gradually add to the cramed mixture.

  • 5 drop by rounded tablespoonfuls 2 inches apart onto greased or parchment-lined baking sheets.
  • 6 bake at 350 degrees for 10-12 minutes or until lightly browned.

Capirotada De Norteno

Ingredients

  • 1/2 cup raisins
  • 1/2 cup brandy
  • 10 -12 slices bread
  • 1/2 cup chopped pecans, toasted
  • 1 cup grated asadero cheese or 1 cup cheddar cheese or 1 cup monterey jack cheese
  • 2 1/2 cups hot water
  • 2 cups sugar
  • 1 cup orange juice
  • 1/4 cup butter
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 1 pinch clove
  • whipped cream, for garnish

Recipe

  • 1 place the raisins in a small bowl and pour the brandy over them. set aside.
  • 2 preheat oven to 350. butter a baking dish.
  • 3 tear the bread into bite size pieces. transfer the bread to the baking dish.
  • 4 add the pecans and the cheese to the bread, mixing both in lightly.
  • 5 scatter the raisins over the top, including any brandy not absorbed by the fruit.
  • 6 pour the sugar into a large, heavy saucepan. warm over medium high heat till the sugar melts and turns a deep golden brown, about 8 - 10 minutes.
  • 7 stir occasionally to ensure even melting.
  • 8 pour the water into the molten sugar, standing back from the pan to avoid the steam that will rise as the water hits the sugar.
  • 9 the mixture will partially solidify.

  • 11 ladle the syrup carefully over the bread.

  • 14 bake for 20-25 minutes, till the syrup has absorbed and the cheese has melted into the pudding.

Ingredients

  • 12 -14 lbs tomatoes
  • 4 cups celery
  • 2 1/2 cups onions, ground
  • 2 1/2 cups green peppers, ground
  • 6 inches cinnamon sticks
  • 4 1/2 cups packed brown sugar
  • 4 cups cider vinegar
  • 1/4 cup salt
  • 1 tablespoon dry mustard
  • 1 1/2 teaspoons ground cloves

Recipe

  • 1 wash, peel, remove stem ends and core and quarter tomatoes into a 10 quart kettle.
  • 2 cook 15 minutes.
  • 3 drain off 6 cups of tomato juice, use for cooking another recipe.
  • 4 add celery, onion, green pepper simmer 1 1/2 hours.
  • 5 add cinnamon stick, brown sugar, vinegar, salt, mustard, cloves and cook another 1 1/2 hours.
  • 6 remove cinnamon.
  • 7 pour into hot jars, leaving 1/2" head space.
  • 8 process in hot water bath for 15 minutes for pints, after water comes to a boil.

Breakfast Oatmeal Pudding

  • 2 1/4 cups quick-cooking oatmeal, uncooked (2 3/4 cups old-fashioned)
  • 3/4 cup firmly packed brown sugar
  • 3/4 cup raisins or 3/4 cup dried cranberries

  • 1/2 teaspoon salt (optional)
  • 3 1/3 cups skim milk

  • 1 preheat oven to 350°f.

  • 5 pour into an 8"x8" greased baking dish and bake for 55-60 minutes or until centre is set and firm to the touch.

Cherry Ricotta Cheese Bread

  • 3/4 cup ricotta cheese
  • 1/3 cup water
  • 6 tablespoons unsalted butter, softened
  • 3 large eggs

  • 3 tablespoons granulated sugar
  • 1 1/2 teaspoons salt

Baked Sugar Doughnuts (bread Machine)

Ingredients

  • 3 medium potatoes, peeled and quartered
  • 1 cup milk (70 to 80 degrees)
  • 2 eggs, well beaten
  • 3/4 cup shortening
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 4 1/2 cups bread flour
  • 2 1/4 teaspoons active dry yeast
  • 3/4 cup sugar
  • 1 1/4 teaspoons ground cinnamon
  • 1/4 cup butter or 1/4 cup margarine, melted

Recipe

  • 1 place potatoes in a saucepan and cover with water.
  • 2 bring to a boil; cook until tender.
  • 3 drain, reserving 1/4 cup cooking liquid; set liquid aside to cool to 70-80 degrees.
  • 4 mash potatoes; set aside 1 cup to cool to room temperature.
  • 5 (refrigerate any remaining mashed potatoes for another use).
  • 6 in bread machine pan, place dough ingredients in order suggested by manufacturer, adding reserved cooking liquid and potatoes.
  • 7 select dough setting (check dough after 5 minutes of mixing; some flour may remain on top; add 1 to 2 tablespoons of water or flour if needed).
  • 8 when cycle is completed, turn dough onto a lightly floured surface.

  • 4 boneless skinless chicken breasts
  • 3 tablespoons butter, salted
  • 1 cup onion
  • 1/4 teaspoon cinnamon
  • 2 teaspoons garlic, chopped
  • 2 tablespoons ginger, ground
  • 3/4 tablespoon turmeric, ground
  • 1 teaspoon chili powder
  • 1 tablespoon coriander seed
  • 1/2 cup almonds, ground
  • 1 cup canned tomato with juice, wedges in tomato juice
  • 1/4 cup tomato paste
  • 1/2 cup low-fat plain yogurt

  • 1 trim and cut the chicken into small cubes, cover and set aside.
  • 2 slice the onions into thin wedges.
  • 3 heat a large saucepan or frying pan and melt 2 to 3 tablespoons of butter until it is frothy.
  • 4 add onions and cinnamon to the pan and fry lightly.
  • 5 when the onions are soft, stir in crushed garlic and ginger. then add turmeric, chili powder and coriander, and saute over medium heat. the spices are fried first to release their maximum flavor and this really enhances the dish.

  • 1 large onion, thinly sliced
  • 3 tablespoons butter
  • 1 pinch ground cinnamon
  • 1/2 teaspoon turmeric
  • 2 teaspoons ground coriander
  • 1 pinch cayenne pepper
  • 2 large skinless chicken breasts
  • 3 tablespoons shredded coconut
  • 2 garlic cloves
  • 10 g fresh ginger
  • 1 cup crushed tomatoes
  • 3 tablespoons tomato paste
  • 1/4 cup table cream
  • 1 pinch salt

  • 1 1. melt the butter in a large skiller and fry onion on medium heat until transparent. be careful not to burn the butter. sprinkle in the cinnamon, turmeric, coriander and cayenne and fry another minute, then add the bite-size chicken pieces. fry until chicken browned on all sides - about 5 minutes.
  • 2 2. while chicken is frying, put coconut, garlic, ginger into a blender or food processor with 1/4 cup water and process into a paste. pour this over the chicken and fry another couple of minutes.

  • 1 peel tomatoes.
  • 2 put tomatoes, onions, and green peppers through blender.
  • 3 add vinegar, salt, cinnamon, celery salt, and red pepper.
  • 4 place mixture into a saucepan and simmer on low for several hours.
  • 5 when nearly done, add sugar and cook another 30 minutes.
  • 6 prepare jars and can sauce while it's hot.

Barley Baked Pudding

  • 1 cup pearl barley, raw
  • 1 cup walnuts, ground
  • 1/2 cup currants
  • 1/2 cup maple syrup
  • 1/2 teaspoon vanilla

  • 2 1/2 cups milk
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon clove

Recipe

  • 1 cook 1 cup pearl barley in enough water (i use pressure cooker, it cooks in 20 minutes).
  • 2 mix cooked barley, currants, walnuts, in 3 quart dish.
  • 3 in a bowl combine maple syrup, vanilla, eggs and milk.
  • 4 pour over barley mixture and stir to mix well into barley mixture.
  • 5 bake in 350f for 30-35 minutes.

Champurrado, Mexican Chocolate Atole

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 gallon water, plus
  • 2 -3 cups water to dissolve the masa harina flour
  • 1 1/2 cups fresh corn masa harina flour
  • 2 1/2 pieces mexican chocolate, tablets (abuelita brand is good)
  • 1 cinnamon stick
  • 4 small piloncillo (raw sugar cane cones)

Recipe

  • 1 place the water in a large pot and add the cinnamon stick. bring to a boil. meanwhile, place the masa in a bowl and add the water. let sit for a few minutes and then blend with a fork or wire whisk until well blended. i sometimes have a hard time dissolving the masa and use my fingers to make sure that there are no lumps remaining. once the water comes to a full boil, add the dissolved masa and immediately begin stirring with a wire whisk. keep on stirring often until it comes to a boil again. cook over low heat for about 8-10 minutes and then add the chocolate tablets, which have previously been broken into pieces. dissolve the chocolate and bring to a boil. then add the sugar cones and stir to dissolve. once this is done, cook for another 5 minutes and remove the cinnamon stick. serve with tamales or any sweet bread, such as cinnamon rolls.

  • 2 cups water
  • 1 whole ripe banana
  • 1 whole ripe peach

Recipe

  • 1 put the water and rolled oats in a pot and set on high.
  • 2 bring to a boil, then stir, turn the heat to the lowest setting, and cook until thickened.
  • 3 meanwhile, dice up the banana and peach.
  • 4 put the banana, peach, and raisins in the pot and stir.
  • 5 add cinnamon and flaxseed to taste.
  • 6 splash of rice milk to taste.

Berry Bars

  • 1 1/2 cups whole wheat pastry flour
  • 1/2 cup brown rice flour
  • 1/2 cup applesauce
  • 1/2 cup honey or 1/2 cup maple syrup
  • 2 1/4 cups mixed berries or 2 1/4 cups blueberries
  • 1/2 cup silken tofu, crumbled
  • 1 1/2 teaspoons cinnamon
  • 6 tablespoons raw wheat germ
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup skim milk

Recipe

  • 1 in a mixer, blend honey or maple syrup with applesauce and the flour.
  • 2 divide the dough in half.
  • 3 spray a 9 x13 inch pan with cooking spray and press 1/2 of the dough into the bottom.
  • 4 sprinkle the berries evenly over the dough.
  • 5 put the remaining dough back into your mixer and mix in the tofu, cinnamon, wheat germ, baking powder, baking soda and soy milk.
  • 6 spread the thick dough over the berries, covering them as best you can.
  • 7 bake at 350 degrees f for 35-45 minutes.
  • 8 cool and slice.

Capirotada (mexican Bread Pudding)

  • 4 cups water
  • 3 cinnamon sticks
  • 1 cup sugar
  • 1 (12 ounce) box raisins
  • brandy
  • 1 loaf french bread, toasted
  • 2 cups american cheese, grated
  • 1 cup pecans, chopped

Recipe

  • 1 place raisins in a small bowl and pour enough brandy so that raisins plump up.
  • 2 in a small sauce pan, add water, cinnamon sticks, and sugar. boil over medium heat for about 10 minutes.
  • 3 remove cinnamon sticks and pour raisins into mix.
  • 4 place toasted bread slices in 9 x 13 baking pan.
  • 5 layer ingredients: cheese, pecans, bread -- etc. repeat steps until all bread is used. (save some pecans for last topping).
  • 6 pour cinnamon mix over bread pudding and sprinkle pecans on top.
  • 7 bake at 350 for 30 minutes.

Recipe

  • 1 mix together, boil for 2 hours or until thick. stir often to keep sugar from sticking. can be canned for later use.

Ingredients

  • 2 cups whole wheat pastry flour (or 1 cup ww flour 1 cup ap flour)
  • 1/4 cup ground flax seed
  • 2 teaspoons pumpkin pie spice
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 15 ounces canned pumpkin
  • 1/2 cup brown sugar, packed
  • 1/2 cup honey
  • 1/4 cup milk (or soymilk)
  • 1/4 cup vanilla yogurt
  • 3 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 1/2 cups blueberries (if frozen don't thaw first)
  • 3/4 cup walnuts, chopped finely

Recipe

  • 1 combine the first 7 ingredients, whisk together.
  • 2 in a separate bowl combine the rest, except the berries and nuts.
  • 3 add flour mixture to wet and mix until just moistened.
  • 4 fold in blueberries and walnuts.
  • 5 spoon into greased muffin tin
  • 6 bake at 375 for 25-30 minutes.
  • 7 cool 2 minutes and remove to rack.

Champurrado - Mexican Hot Chocolate

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 cup water
  • 2 cinnamon sticks
  • 1 teaspoon vanilla extract (or 1/2 vanilla bean, split lengthwise)
  • 3 (3 ounce) disks mexican chocolate (ibarra or abuelita chocolate)
  • 3 (12 ounce) cans evaporated milk
  • 1 (14 ounce) can condensed milk
  • 1/2 cup masa harina flour, to thicken (or one 1.6 oz. packet maizena cornstarch and vanilla powdered beverage mix)

  • 1 in a large saucepan, bring water and cinnamon stick to a boil.
  • 2 add chocolate, stirring until melted. add vanilla.
  • 3 stir in the cans evaporated milk and the condensed milk; bring to a simmer.
  • 4 add the masa harina or cornstarch mixture, stirring well to combine.
  • 5 heat until thickened. remove cinnamon sticks before serving.
  • 6 may be served either hot or cold. good with a splash of grand marnier for the adults, if desired.

  • 1 1/2 cups green peppers, chopped
  • 2 cups onions, chopped
  • 1 1/2 cups vinegar

  • 1 teaspoon ground cloves
  • 1 tablespoon celery seed
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon ground allspice

Recipe

  • 1 combine all ingredients and bring to a boil. simmer until as thick as wanted (1 to 2 hours). stir frequently to prevent sticking.
  • 2 pour boiling hot into hot jars leaving 1/8" head space. process in boiling water for 15 minutes.

Berry And Banana Blend

Ingredients

  • 1/2 cup skim milk
  • 4 ice cubes
  • 1/2 cup fresh blueberries or 1/2 cup unsweetened frozen blueberries, thawed
  • 1 medium ripe banana, peeled
  • 4 ounces sugar, free fat free vanilla yogurt
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon cinnamon

Recipe

  • 1 combine milk and ice cubes in a blender, cover, and whip until icy smooth.
  • 2 add fruit and whip again.
  • 3 add yogurt, vanilla extract, and cinnamon, then blend until combined. serve immediately.

Cape Malay Rice

  • 1 cup rice (i used basmati rice)
  • 2 tablespoons sugar
  • 1 teaspoon ground cardamom
  • 2 cups water

Chana Dal Kofta Curry

  • 150 g channa dal, soaked for 2 hours
  • 2 medium onions, peeled,washed and finely chopped
  • 1 inch fresh ginger, peeled,washed and chopped

  • 3 green chilies, washed,ends trimmed and finely chop the rest of the chillies
  • 1 tablespoon chopped fresh curry leaf
  • 1 tablespoon fresh coriander leaves, finely chopped
  • 2 cloves
  • 1/4 inch cinnamon stick
  • 1 teaspoon anise seed
  • salt
  • oil, to fry
  • 1/2 cup fresh coconut, ground to a paste
  • 1 1/2 teaspoons ginger-garlic paste
  • 1 large onion, peeled,washed and finely chopped
  • 2 fresh tomatoes, washed,peeled and finely chopped
  • 1/4 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1/2 teaspoon garam masala powder
  • 2 cloves
  • 1/4 inch cinnamon stick
  • 1/2 teaspoon anise seed
  • salt
  • 2 tablespoons oil

Recipe

  • 1 grind the chana dal with the cloves, cinnamon stick, aniseeds, ginger and garlic pastes to a paste.
  • 2 add the finely chopped ingredients with salt to the ground chana dal.
  • 3 make small balls out of this mixture.
  • 4 heat oil in a wok.
  • 5 gently, lower the balls into the hot oil.
  • 6 deep fry the balls until lightly browned on either side.
  • 7 drain on clean and absorbent paper towels and keep aside.
  • 8 now, prepare the gravy.
  • 9 to do so, heat 2 tbsps.
  • 10 of oil in a pan.
  • 11 add the cloves, aniseeds and cinnamon stick.
  • 12 stir-fry for a minute.
  • 13 toss in the onion and stir-fry until it is lightly browned.
  • 14 add the ginger-garlic paste.
  • 15 stir-fry for 3 minutes.
  • 16 add the masala{spice} powders and stir-fry for 2 minutes.
  • 17 then add the tomatoes and salt.
  • 18 mix well and cook on medium flame until the oil starts leaving the sides of the pan.
  • 19 now stir in the ground coconut paste.
  • 20 stir and cook for 3 minutes.
  • 21 add a cup of water.
  • 22 allow it to boil for 6 minutes.
  • 23 now, gently add the fried koftas, one by one, and allow this dish to cook on simmer{low flame} for 5 minutes.
  • 24 garnish with corriander leaves.
  • 25 serve hot with rotis or rice.

Cherry Salsa

Champurrado (mexican Hot Chocolate)

  • 1 in a large saucepan, combine 8 cups of the water and cinnamon; bring to a boil.
  • 2 place the remaining water and masa harina in a blender; cover and blend until smooth.
  • 3 pour the mixture through a fine mesh sieve into the cinnamon-water mixture.
  • 4 bring to a boil, reduce heat to low; cook, stirring constantly with wire whisk for 6 to 7 minutes or until thickened.

Apricot Holiday Ham

  • 1 (18 ounce) jar apricot preserves
  • 2 teaspoons cornstarch

  • 1/8 teaspoon cinnamon
  • 1 (20 ounce) can pineapple slices, drained

Recipe

  • 1 place ham on a rack in a shallow baking pan.
  • 2 score top of ham in a diamond pattern, making cuts about 1/4 inch deep.
  • 3 stud with whole cloves.
  • 4 insert a meat thermometer into center of ham.
  • 5 bake at 325 degrees about 2 hours or until thermometer registers 140 degrees.
  • 6 combine apricot preserves and cornstarch in a small saucepan.
  • 7 stir in orange zest, orange or pineapple juice and cinnamon.
  • 8 cook and stir until thickened and bubbly.
  • 9 top ham with pineapple slices.
  • 10 spoon some of the preserves mixture over the ham 2 or 3 times during last last 30 minutes of baking.

  • 400 g canned tomatoes
  • 2 medium onions, diced
  • 200 ml plain low-fat yogurt
  • 50 g ground almonds
  • 6 teaspoons ghee (strained butter)
  • 1 teaspoon corn oil
  • 2 teaspoons chopped fresh cilantro
  • 2 bay leaves
  • 1 cinnamon stick, broken in two
  • 6 cloves
  • 6 green cardamom pods
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon garam masala
  • 1 1/4 teaspoons salt

Recipe

  • 1 put the yogurt, almonds, dry spices, ginger, garlic, tomatoes and salt into a mixing bowl and blend together thoroughly.
  • 2 put the chicken into a large mixing bowl and pour the yogurt mixture over it.
  • 3 set aside.
  • 4 melt together the ghee and oil in a medium-sized wok or deep round-bottomed skillet.
  • 5 add the onions and stir-fry for about 3 minutes.
  • 6 add the chicken mixture and stir-fry for 7-10 minutes.
  • 7 stir in about half the cilantro and mix well.
  • 8 bring to a boil, then reduce heat and simmer until desired consistency is reached.
  • 9 remove bay leaves and cinnamon stick.
  • 10 serve garnished with remaining cilantro.

Butter Chicken - Murg Makhani

  • 8 -12 chicken legs-thighs
  • 4 chicken breasts (cubed)
  • 250 g unsalted butter
  • 1000 ml double cream
  • 200 ml chicken stock (oxo or knorr will do)
  • 4 tablespoons plain yogurt
  • 400 g chopped tomatoes
  • 2 tablespoons tomato paste
  • 1 cinnamon stick
  • 1 teaspoon mild chile
  • 1 teaspoon sweet paprika
  • 1 medium brown onion
  • 3 garlic cloves
  • 1 1/2 teaspoons garam masala
  • 2 teaspoons tandoori masala
  • 100 g ground almonds
  • 1 teaspoon coriander (crushed)
  • 1 teaspoon salt

Recipe

  • 1 preparation (2 days before).
  • 2 place in a bowl 2 tablespoons of yoghurt, the tandoori masala and salt, mix well and add the chicken, ensure the chicken is coated well and evenly. cover and leave in the fridge for 2 days to marinate.
  • 3 preparation (on the day).
  • 4 mince the garlic and onion into a paste. liquidise the chopped tomatoes. melt the butter in a large deep saucepan. gently fry the onion paste for about 1 minute, add all the remaining powdered ingredients and the coriander (not the almonds) and stir well. add the tomato paste, tomato puree and chicken stock and stir well allow to simmer for 10 minutes. add the marinated chicken and simmer for 5 more minutes. add the cream, yoghurt (2 tablespoons), powdered almonds and cinnamon stick and stir well. allow to simmer gently stirring regularly for 30 minutes taste check and if required remove the cinnamon stick (important). remove from heat and place in a ovenproof dish. place in the over at 200°c for a further 20-25 minutes stirring regularly.
  • 5 serve on pilau rice.
  • 6 this dish is best and usually served at weddings and special events due to the prohibitive cost of making it in india. however we are able to enjoy it at anytime. the sauce will freeze and keep for up to a month, and this is very fattening! but delicious.

Cherry Spiced Cider

  • 1 put apple cider, orange juice, maraschino cherry juice, cinnamon sticks, orange peel, cloves and allspice in a large saucepan; bring to a boil. reduce heat; simmer 15 minutes. strain out cinnamon sticks, orange peel. cloves and allspice. (can be prepared in advance and reheated in crock pot).
  • 2 place 2 maraschino cherries and 1 orange slice half in each of six mugs. pour about 2/3 cup spiced cider over cherries. serve warm.

Breakfast Pina Puffs

  • 1 beat together shortening and just 1/2 cup of the sugar on medium speed until creamy and smooth.
  • 2 add egg and beat until belnded.
  • 3 mix together flour, baking powder, and salt.
  • 4 add to the shortening mixture, alternating with the crushed pineapple& its juices, beginning and ending with the flour mixture.
  • 5 beat on low speed just until blended after each addition.
  • 6 spoon into greased muffin tins, filling 2/3s full.
  • 7 bake in a preheated oven at 350 f for 25 minutes, or until golden.
  • 8 remove from tins immediately and brush with melted butter.
  • 9 stir together remaining sugar and cinnamon and sprinkle over the tops o each puff.
  • 10 serve hot.

Cape Malay Yellow Rice With Raisins

Champurrado (mexican Chocolate Beverage)

  • 4 ounces mexican chocolate (this is called ibarra chocolate, about 2 "discs")

  • 2 1/2 cups milk
  • 7 ounces masa harina
  • 2 tablespoons dark brown sugar (mexican panocha sugar, also known as piloncillo is what i use for this recipe)

Recipe

  • 1 note: if mexican chocolate is unavailable, you can substitute by mixing 4 ounces of dark bitter chocolate (minimum 70% cocoa solids) with 1/4 cup ground almonds, 1/4 cup sugar and 2 teaspoons ground cinnamon. process in food processor to fine powder.
  • 2 grind the chocolate to a fine powder. i use a cheese grater to grate the chocolate first then whirl the chocolate in a clean coffee mill.
  • 3 put the milk and water in a heavy saucepan, heat on medium, and gradually stir in the masa harina until a smooth paste is formed. use a molinollo or a wire whisk for frothing the liquid.
  • 4 place the saucepan over medium heat and bring the mixture to an almost boil, stirring constantly untl the frothy drink thickens.
  • 5 stir in the powdered chocolate, then add the sugar. serve immediately. garnish with a cinnamon stick if desired.

Berry Apple Fantasy Pie

  • 1 pie crust
  • 1 cup sugar
  • 4 teaspoons quick-cooking tapioca
  • 1 teaspoon ground cinnamon
  • 1 cup fresh blackberries
  • 1 cup fresh raspberry
  • 2 cups apples, peeled and sliced
  • 2 tablespoons butter, cut up

Recipe

  • 1 prepare pie crust pastry and separate into two balls. on lightly floured surface roll out one into a 12-inch circle. transfer the rolled out pastry onto a 9 inch pie plate.
  • 2 in large mixing bowl, stir together sugar, tapioca, and cinnamon. add the berries and apple slices. toss gently until coated. let stand 15 minutes.
  • 3 sppon filling into pastry-lined pie plate. dot with butter. trim pastry even with edge of the pie plate. moisten the edge of the pastry with water.
  • 4 roll out remaining pastry into a 12-inch circle. cut slits to let steam escape. place pastry over the filling. trim the top crust to 1/2 inch beyond the edge of the pie plate. fold top pastry and crimp edge. cover edge of crust with foil to prevent overbrowning.
  • 5 bake in a 375°f oven for 25 minutes. remove the foil and bake 20-25 additional minutes. should be golden brown with bubbly filling. cool on a rack.

Berry Banana Bread (pampered Chef)

  • 4 beat at medium speed for 2 minutes, scraping the bowl occasionally.
  • 5 add the flour mixture, stirring just until moistened, then fold in the walnuts.

  • 2 teaspoons ground ginger
  • 1 teaspoon ground cayenne pepper or 1 teaspoon paprika

  • 1 teaspoon garam masala
  • 1/2 teaspoon cinnamon
  • 1 (6 ounce) can tomato paste
  • 1 (8 ounce) can tomato sauce
  • 1 cup sour cream or 1 cup plain yogurt
  • extra water, as needed

Recipe

  • 1 melt butter over medium-low heat.
  • 2 add cashews and roast slowly until golden; lower heat if necessary to keep from burning.
  • 3 add cauliflower, onion, garlic and peppers and sauté in the cashew butter mixture a few minutes.
  • 4 add ginger, spices, tomato paste and tomato sauce to the pan, along with some water. .
  • 5 simmer covered until chicken or cauliflower reaches desired doneness. if sauce gets too thick, add more water.
  • 6 add the cream and heat through.
  • 7 serve over rice or with bread.

Amaretti

  • 2 1/2 cups sliced almonds, blanched
  • 1 1/3 cups granulated sugar
  • 1/3 cup confectioners' sugar
  • 1 tablespoon confectioners' sugar
  • 1 tablespoon grated lemon zest
  • 1/4 teaspoon salt
  • 1/2 teaspoon pure vanilla extract
  • 3/4 teaspoon almond extract
  • 1/2 cup egg
  • almonds, coarsely chopped and blanched (garnish)
  • confectioners' sugar (garnish)

Recipe

  • 1 line two baking sheets with parchment paper.
  • 2 in a food processor fitted with the steel blade, process the sliced almonds, sugars, lemon zest, salt, and extracts until they form a coarse paste, 1 to 2 minutes.
  • 3 slowly add the egg whites and continue to process until the mixture forms a smooth paste. (it should be scoopable, not spreadable.).
  • 4 scoop the dough onto the prepared baking sheets with a small ice cream scoop about 11⁄2 inches apart. top with a sprinkling of chopped almonds. let the cookies dry at room temperature for 1 hour (this gives the cookies their crisp crust).
  • 5 when you are ready to bake, preheat the oven to 400 degrees f. dust the cookies with confectioners’ sugar. bake until evenly golden brown, 12 to 15 minutes. rotate and switch the baking sheets as necessary for even baking.
  • 6 allow the cookies to cool for a minute on the baking sheets and then transfer, using a spatula, to a cooling rack and allow to cool completely. store the cookies in an airtight container.
  • 7 cinnamon amaretti: replace the lemon zest with 1 teaspoon ground cinnamon.

Berry Baked Oatmeal

Blackberry Pie

Amaranth Pie Crust - Gluten Free

Recipe

  • 1 preheat oven to 400f and lightly oil a 9-inch pie pan; set aside.
  • 2 combine dry ingredients and blend well.
  • 3 combine oil and 3 tablespoons water and blend with fork; add all at once to flour.
  • 4 stir only until a ball forms.
  • 5 if ball appears dry and crumbly, add a little more water, one teaspoon at a time, until ball hangs together. (moisture content of flour varies.).

  • 7 dough tears easily, but mends easily using extra bits to patch.

Champagne Holiday Punch

  • 1 in a saucepan, bring water, sugar, cinnamon sticks and cloves to boil.
  • 2 reduce heat and simmer for 5 minutes.
  • 3 discard cinnamon and cloves.
  • 4 cool to room temperature and pour into a large pitcher.
  • 5 add cranberry juice and pineapple juice, stirring well to combine.
  • 6 chill in fridge until ready to serve.
  • 7 at serving time, add 1 bottle of chilled champagne.

Cape Malay-type Slightly-spiced Baked Custard

  • 3 egg yolks

Recipe

  • 1 preheat oven to 300 deg f/150 deg celsius grease 6 ramekins or cups which can hold about 1 cup each (250 ml).
  • 2 mix the cream, milk and spices in a small saucepan, and bring to boiling point. remove from heat.
  • 3 whisk the eggs, egg yolks and brown sugar (preferably with an electric mixer) until really well mixed and the sugar almost melted.
  • 4 add the warm creamy mixture, while whisking, to the egg mixture, keeping up whisking. whisk until the sugar has melted.

  • 2 whisk sugar and gelatin in a medium bowl to blend. add boiling water and whisk vigorously to until gelatin and sugar dissolve and mixture becomes very foamy, about 2 minutes. strain the juices from bowl of orange segments into gelatin mixture and whisk to blend.
  • 3 refrigerate gelatin mixture until lukewarm, stirring occasionally, about 25 minutes. whisk in chilled champagne. divide the gelatin among the prepared containers. cover each and refrigerate until gelatin sets, at least 2 hours and up to 1 day.

Baked Sweet Potatoes

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • 6 -7 large sweet potatoes
  • 1/2 cup butter, softened
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2/3 cup brown sugar
  • 1/2 teaspoon salt and pepper
  • 1 bag mini marshmallows

Recipe

  • 1 preheat your oven to 350f.
  • 2 clean potatoes under water, dry, and rub with a little oil and salt and pepper.
  • 3 place them on a large cookie sheet and bake in the oven for about 30-45 minutes or until almost fork tender.
  • 4 remove from oven and set aside to cool slightly, just until you can handle them.
  • 5 in a small mixing, stir together the rest of the ingriedents.
  • 6 peel potatoes and slice them 1/4-1/2 inch thick.
  • 7 place one layer of sweet potatoes in a 9"-13" pan then spread on a bit of the butter mixture; repeat about 3-4 more times ending with butter mixture on top.
  • 8 return to a 350f oven and bake for another 30 minutes; top with an even layer of marshmallows and return to oven until marshmallows are browned, only about 3-5 minutes at most.
  • 9 remove from oven and let stand for about 15 minutes before serving.

Butter Chicken Curry

  • 3 lbs skinless chicken, and cut into 2-inch pieces
  • 1 inch gingerroot
  • 6 garlic cloves
  • 1 1/2 teaspoons salt
  • 5 ounces plain yogurt
  • 1 lemon, juice of
  • 1 cinnamon stick, 2-inch long broken up
  • 10 green cardamoms
  • 6 cloves
  • 10 red chili peppers
  • 8 peppercorns
  • 2 tablespoons oil
  • 2 tablespoons tomato puree
  • 8 ounces butter
  • 14 ounces chopped tomatoes
  • 5 fluid ounces single cream

Recipe

  • 1 grind together the cinnamon, cardamoms, cloves, chillies and peppercorns.
  • 2 mix the spices into the yogurt, add the juice of the lemon blend well.
  • 3 marinate the chicken in this mix for about two hours.
  • 4 crush the garlic and ginger to a pulp with the salt, this can be done with the blade of a knife.
  • 5 heat the oil in a pan or wok and fry the ginger and garlic pulp for 1 minute. add the chicken and spices and cook for ten minutes.
  • 6 add then tomato puree and tinned tomatoes, and butter, bring to the boil reduce the heat and simmer till the chicken is cooked.
  • 7 stir in the cream and simmer for a further 5 minutes.
  • 8 serve with boiled rice and curried pineapple.
  • 9 superb.

Champagne Pear Butter

  • 20 yellow bartlet pears (peel, core, and cut into a small dice)
  • 4 cups sugar
  • 1 teaspoon ground cinnamon

  • 1 cup champagne

Recipe

  • 1 place diced pears into slow cooker. in mixing bowl, combine sugar, cornstarch, spices, vanilla, and champagne, stirring to dissolve slightly. pour mixture over pears, cover, and cook on high 2 hours, stirring occasionally until syrup starts to form. turn to low setting and cook approximately 6-8 hours.
  • 2 ladle into blender in small batches, blending until smooth and pouring out into bowl, repeating until all the pears have been processed and you have bowl full of fruit butter. i then ladle mine into jelly jars and can them using the water bath canning method.

  • 1 heat 1 tablespoon oil in a large saucepan over medium high heat.
  • 2 saute onion until soft and translucent.
  • 3 stir in butter, lemon juice, ginger, garlic, 1 teaspoon garam masala,cayenne, chili powder,coriander, cinnamon, cumin and bay leaf.
  • 4 cook, stirring, for about 2 minutes.
  • 5 add tomato sauce and cook for 2 minutes, stirring frequently.
  • 6 stir in cream and yogurt.
  • 7 reduce heat to low and simmer for 10 minutes, stirring frequently.
  • 8 season with salt, pepper .
  • 9 remove from heat and set aside.
  • 10 toss bones and skin from thighs into skillet and render fat on med-high heat. about 5 minutes.
  • 11 heat 1 tablespoon rendered chicken oil in a large heavy skillt over medium heat.
  • 12 cook chicken until lightly browned, about 10 minutes.
  • 13 reduce heat med-low and season with 1 teaspoon garam masala and cayenne.
  • 14 stir in about 1/3 of the sauce and simmer until reduced by 1/2.
  • 15 pour remaining sauce into chicken and simmer 10 minutes.

Cap'n Crunch French Toast

  • 10 slices texas toast thick bread (thick sliced bread)

  • 1 place the cereal in a gallon sized ziptop bag, remove air and seal. crush the cereal into crumbs- the kids will have fun with this step. do not use a food processor because the crumbs will be too fine.
  • 2 mix the eggs, yogurt, sugar, vanilla and cinnamon together and place in a shallow dish.
  • 3 take 1 slice of bread, dip both sides in the egg mixture, then coat with the cereal crumbs. spray a hot pan with butter flavored cooking spray or melt some butter in the pan. add the coated bread to the pan and cook each side 2-3 minutes until light brown. repeat for the other 9 slices of bread.
