Brough House Oatmeal Raisin Muffins

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • 2 cups quick oats
  • 1 cup whole wheat flour
  • 3/4 cup unbleached flour
  • 1/4 cup wheat germ
  • 1/2 cup packed brown sugar
  • 2 tablespoons baking powder
  • 2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 eggs
  • 1 1/2 cups low-fat milk
  • 2/3 cup olive oil
  • 1/3 cup applesauce
  • 1 cup raisins

Recipe

  • 1 combine dry ingredients (except raisins) in mixing bowl.
  • 2 whisk together wet ingredients, and stir gently into dry. stir in raisins.
  • 3 spray muffin cups and fill 3/4 full with batter. let sit for 15 minutes.
  • 4 bake 20 minutes or until golden brown and firm. remove to rack to cool slightly, then serve warm with a drizzle of honey.
