Brough House Oatmeal Raisin Muffins

Ingredients
- 2 cups quick oats
- 1 cup whole wheat flour
- 3/4 cup unbleached flour
- 1/4 cup wheat germ
- 1/2 cup packed brown sugar
- 2 tablespoons baking powder
- 2 teaspoons salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 eggs
- 1 1/2 cups low-fat milk
- 2/3 cup olive oil
- 1/3 cup applesauce
- 1 cup raisins
Recipe
- 1 combine dry ingredients (except raisins) in mixing bowl.
- 2 whisk together wet ingredients, and stir gently into dry. stir in raisins.
- 3 spray muffin cups and fill 3/4 full with batter. let sit for 15 minutes.
- 4 bake 20 minutes or until golden brown and firm. remove to rack to cool slightly, then serve warm with a drizzle of honey.
