Chilled Strawberry Soup

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1 cup apple juice
  • 1 cup water, divided
  • 2/3 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 2 cups fresh strawberries
  • 2 (8 ounce) cartons strawberry yogurt
  • 2 drops red food coloring (optional)
  • 1/2 cup strawberry, halved

Recipe

  • 1 in a saucepan, combine the apple juice, 3/4 cup water, sugar, cinnamon and cloves; bring to a boil over medium heat.
  • 2 remove from heat; cool.
  • 3 place strawberries and remaining water in a blender or food processor; cover and process until smooth.
  • 4 pour into a large bowl.
  • 5 add the apple juice mixture, yogurt and food coloring if desired.
  • 6 cover and refrigerate until well chilled.
  • 7 garnish with additional strawberries if desired.
