Barberry Pickled Relish

Total Time: 30 mins Preparation Time: 30 mins

Ingredients

  • 1 pint ripe barberries
  • 2 cups sugar
  • 4 cups cider vinegar
  • 1/2 teaspoon ground allspice
  • 1 teaspoon whole cloves
  • 1 cinnamon stick

Recipe

  • 1 wash and stem the fruit.
  • 2 place into a deep saucepan and add the sugar and the vinegar.
  • 3 then add the allspice, cloves and cinnamon.
  • 4 bring to a boil and hold there till the berries lose their color.
  • 5 remove from heat and allow to cool.
  • 6 strain and pour into hot sterile pint jars and seal.
