Banana-walnut Loaf

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • 2 1/4 cups flour
  • 1 1/4 cups sugar
  • 2 eggs
  • 1/2 cup shortening
  • 1 1/2 cups mashed bananas
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 1/2 cup chopped walnuts

Recipe

  • 1 mix sugar and shortening until light and fluffy.
  • 2 add egg one at a time, mixing to incorporate well.
  • 3 add mashed banana.
  • 4 mix all dry ingredients together and add to wet ingredients 1/3 at a time.
  • 5 add vanilla.
  • 6 spoon into well-greased loaf pan 5" x 13".
  • 7 bake@ 375 degrees for 45 minutes or until a tester comes out clean.
