Banana-walnut Loaf

Ingredients
- 2 1/4 cups flour
- 1 1/4 cups sugar
- 2 eggs
- 1/2 cup shortening
- 1 1/2 cups mashed bananas
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla
- 1/2 cup chopped walnuts
Recipe
- 1 mix sugar and shortening until light and fluffy.
- 2 add egg one at a time, mixing to incorporate well.
- 3 add mashed banana.
- 4 mix all dry ingredients together and add to wet ingredients 1/3 at a time.
- 5 add vanilla.
- 6 spoon into well-greased loaf pan 5" x 13".
- 7 bake@ 375 degrees for 45 minutes or until a tester comes out clean.
