Carnitas!

Total Time: 3 hrs 5 mins Preparation Time: 5 mins Cook Time: 3 hrs

Ingredients

  • 1/8 cup apple cider vinegar
  • 1/8 cup lime juice
  • 1/2 tablespoon garlic
  • 1/2 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/2 tablespoon sea salt
  • 1/4 teaspoon ground cloves or 1/4 teaspoon allspice or 1/4 teaspoon cinnamon or 1/4 teaspoon nutmeg
  • 1 bay leaf
  • 1/2 cup chicken broth
  • 1 teaspoon tabasco sauce
  • 2 lbs lamb shoulder

Recipe

  • 1 mix all ingredients in a 12" sauté pan.
  • 2 cover, set on the lowest heat on the smallest burner for 1 hour.
  • 3 flip lamb, braise for another hour.
  • 4 flip lamb, uncover, and braise for a 3rd hour.
  • 5 shred lamb in pan on the burner in all of it's juices.
