Caribbean Chicken Kebabs

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 1/4 lbs chicken breasts
  • 1 lime, rind
  • 2 tablespoons lime juice
  • 1 tablespoon rum or 1 tablespoon sweet sherry
  • 1 tablespoon light muscovado sugar
  • 1 teaspoon ground cinnamon
  • 2 mangoes, peeled and diced
  • cooked rice, for serving

Recipe

  • 1 cut the chicken in bite-sized chunks and place in a bowl with the lime, rum, sugar and cinnamon.
  • 2 toss well and let stand for 1 hour.
  • 3 save the juices and thread the chicken onto four wooden skewers, alternateing with the mango cubes.
  • 4 cook under a hot grill or barbecue for 8-10 minutes, until the chicken is tender and golden brown.
  • 5 serve with rice.
