Baked Lamb Chops And Spiced Rice

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 6 lamb chops
  • salt and pepper
  • 1 tablespoon vegetable oil
  • 1/4 cup brown sugar
  • 2 tablespoons flour
  • 1 cup raisins
  • 2 cups chicken broth
  • 1 tablespoon cider vinegar
  • 3 tart apples, cored and sliced
  • 1 cup uncooked rice
  • 1 tablespoon sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter
  • 2 cups boiling water

Recipe

  • 1 sprinkle lamb chops with salt and pepper.
  • 2 brown in oil.
  • 3 mix brown sugar and flour in a small saucepan.
  • 4 add raisins, broth and vinegar.
  • 5 cook over low heat 2 minutes.
  • 6 arrange apple slices on lamb chops; pour sauce over lamb chops and apples.
  • 7 cover and bake 350° for 45 minutes or until tender.
  • 8 combine all ingredients for rice in a 1 1/2 quart casserole.
  • 9 bake uncovered for 30 minutes.
