Carrot Souffle'

Ingredients
- Servings: 6
- 1 1/2 lbs carrots, peeled and sliced
- 3/4 cup margarine
- 3 large eggs
- 1/4 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 1/2 cups granulated sugar
- 1/4 teaspoon ground cinnamon
Recipe
- 1 cook carrots in boiling water for 15 minutes or until tender; drain.
- 2 in the work bowl of a food processor, combine the carrots and the rest of the ingredients and process until smooth, stopping once to scrape down the sides.
- 3 spoon into a lightly greased 1 1/2 quart souffle' dish.
- 4 bake at 350 about 1 hour or until set and lightly browned.
- 5 serve immediately.
