Carrot Souffle'

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 1/2 lbs carrots, peeled and sliced
  • 3/4 cup margarine
  • 3 large eggs
  • 1/4 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 cups granulated sugar
  • 1/4 teaspoon ground cinnamon

Recipe

  • 1 cook carrots in boiling water for 15 minutes or until tender; drain.
  • 2 in the work bowl of a food processor, combine the carrots and the rest of the ingredients and process until smooth, stopping once to scrape down the sides.
  • 3 spoon into a lightly greased 1 1/2 quart souffle' dish.
  • 4 bake at 350 about 1 hour or until set and lightly browned.
  • 5 serve immediately.
