Adrienne Barbeau's Yams

Ingredients
- Servings: 18
- 7 lbs yams, boil tender, cool (peel)
- 1/2 cup butter (divided use)
- 1 pinch salt
- 1/2 teaspoon pepper
- 1/3 cup honey
- 1/2 teaspoon nutmeg
- 1/3 teaspoon cinnamon
- 3 granny smith apples (apples, peel, core, thin)
- 1/4 cup butter (cut squares)
Recipe
- 1 mash yams with 1/4 c butter -- salt and pepper.
- 2 melt 1/4 cup butter with nutmeg and honey.
- 3 pour into bottom of casserole and layer with apples.
- 4 add mashed yams and top with cinnamon and 1/4 cup butter squares.
- 5 bake at 350 degrees for 45 minutes until bubbling.
