Adrienne Barbeau's Yams

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 18
  • 7 lbs yams, boil tender, cool (peel)
  • 1/2 cup butter (divided use)
  • 1 pinch salt
  • 1/2 teaspoon pepper
  • 1/3 cup honey
  • 1/2 teaspoon nutmeg
  • 1/3 teaspoon cinnamon
  • 3 granny smith apples (apples, peel, core, thin)
  • 1/4 cup butter (cut squares)

Recipe

  • 1 mash yams with 1/4 c butter -- salt and pepper.
  • 2 melt 1/4 cup butter with nutmeg and honey.
  • 3 pour into bottom of casserole and layer with apples.
  • 4 add mashed yams and top with cinnamon and 1/4 cup butter squares.
  • 5 bake at 350 degrees for 45 minutes until bubbling.
