Brown Sugar And Oatmeal Crumbly Apple Bars

Total Time: 1 hr 10 mins Preparation Time: 30 mins Cook Time: 40 mins

Ingredients

  • 3/4 cup brown sugar, packed
  • 3/4 cup rolled oats
  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour (you can use all flour if that's all you have around, but wheat flour will add more good-for-yo)
  • 1/2 teaspoon baking soda
  • 3/8 teaspoon salt (just dip the 1/4 tsp measuring spoon in halfway for that 1/8)
  • 10 tablespoons cold butter, divided
  • 3 small apples, cored, unpeeled and thinly sliced
  • 2 teaspoons lemon juice, divided
  • 1/2 teaspoon cinnamon
  • 1/2 cup sugar
  • 1 1/2 tablespoons cornstarch
  • 1/2 cup hot water
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped pecans (optional) or 1/2 cup walnuts (optional)

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 line a nine inch square pan with foil or parchment paper.
  • 3 in a large bowl, combine brown sugar, oats, flour, soda, and salt.
  • 4 cut in 9 tablespoons butter. (this can also be done in a food processor.)
  • 5 reserve 3/4 cup of the mixture and pat the rest into prepared pan. it will be dry.
  • 6 toss apples with half of lemon juice and arrange over crust in pan.
  • 7 sprinkle with cinnamon.
  • 8 in a saucepan, combine sugar, cornstarch and hot water.
  • 9 turn heat to medium and cook, whisking constantly until mixture begins to boil and thicken.
  • 10 remove from heat and stir in vanilla, remaining 1 tablespoon butter and remaining teaspoon of lemon juice.
  • 11 pour over apples.
  • 12 sprinkle with remaining crumb mixture and nuts, if using.
  • 13 bake at 350 degrees for 35-45 minutes, or until lightly browned.
