Chiquita Bonita's Hawaiin Carrot Muffins

Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 3 eggs
- 1 1/2 cups sugar
- 3/4 cup mayonnaise
- 0.5 (14 ounce) can pineapple, crushed, undrained
- 2 cups carrots, shredded
- 1/2 cup pecans
- 1/2 cup raisins
Recipe
- 1 combine flour, baking powder, cinnamon, baking soda, salt and nutmeg; set aside,.
- 2 in large bowl, beat eggs, sugar, mayonnaise and pineapple until well blended. (you can freeze the remaining 1/2 can of pineapple for next batch).
- 3 blend in dry ingredients with fork. mix only until all flour has been moistened.
- 4 fold in carrots and pecans and raisins.
- 5 spoon batter into muffin cups, filling to the top.
- 6 bake at 400f for 15-20 minutes or until done.
- 7 makes approximately 15 large muffins.
