Chiquita Bonita's Hawaiin Carrot Muffins

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 3 eggs
  • 1 1/2 cups sugar
  • 3/4 cup mayonnaise
  • 0.5 (14 ounce) can pineapple, crushed, undrained
  • 2 cups carrots, shredded
  • 1/2 cup pecans
  • 1/2 cup raisins

Recipe

  • 1 combine flour, baking powder, cinnamon, baking soda, salt and nutmeg; set aside,.
  • 2 in large bowl, beat eggs, sugar, mayonnaise and pineapple until well blended. (you can freeze the remaining 1/2 can of pineapple for next batch).
  • 3 blend in dry ingredients with fork. mix only until all flour has been moistened.
  • 4 fold in carrots and pecans and raisins.
  • 5 spoon batter into muffin cups, filling to the top.
  • 6 bake at 400f for 15-20 minutes or until done.
  • 7 makes approximately 15 large muffins.
