Carrot-zucchini Bars

Total Time: 1 hr 5 mins Preparation Time: 30 mins Cook Time: 35 mins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoons salt
  • 1/2 cup margarine, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1 cup grated carrot
  • 1 cup grated zucchini
  • 1 cup sunflower seeds
  • 3 ounces cream cheese
  • 1/4 cup margarine, softened
  • 1 teaspoon milk
  • 1 teaspoon vanilla
  • 2 cups powdered sugar

Recipe

  • 1 grease and flour a 9x13 inch pan.
  • 2 in a small bowl, combine flours, baking powder, cinnamon and salt; set aside.
  • 3 in a large bowl with electric mixer at high speed, beat margarine, sugar, eggs until fluffy and light.
  • 4 on low speed, mix in flour mixture until well blended.
  • 5 stir in carrot, zucchini, and sunflower seeds.
  • 6 spread batter in pan and bake 30 to 35 minutes at 350 degrees f.
  • 7 cool completely on wire rack.
  • 8 frost with cream cheese frosting.
  • 9 ----creamcheese frosting----.
  • 10 stir all frosting ingredients together until smooth and creamy.
