Carrot Souffle

Total Time: 1 hr 40 mins Preparation Time: 25 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 8
  • 1 1/2 lbs carrots, peeled and sliced
  • 1/2 cup butter
  • 3 eggs
  • 1/4 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 cup sugar
  • 1/4 teaspoon cinnamon, ground

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 lightly grease a 1 1/2 quart souffle dish; set aside.
  • 3 cook carrots in boiling water to cover for 15 minutes or until tender; drain.
  • 4 in the work bowl of a food processor, combine carrots, butter, eggs, flour, baking powder, sugar and cinnamon an dprocess until smooth, stopping once to scrape down the sides.
  • 5 spoon into prepared dish.
  • 6 bake about 1 hour or until lighlty browned.
  • 7 serve immediately.
