Banana Fritters

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 3/4 cup yellow cornmeal
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon cayenne pepper, to taste (optional)
  • 1 1/4 cups mashed bananas
  • 1 large egg
  • 2 tablespoons milk
  • vegetable oil (for frying)

Recipe

  • 1 set oven to 375 degrees.
  • 2 spray a baking sheet with cooking spray.
  • 3 in a bowl whisk together cornmeal, flour with baking powder, salt, cinnamon and cayenne pepper (if using).
  • 4 in another bowl mix together banana with egg and milk.
  • 5 add the cornmeal mixture to the banana mixture and stir until just combined.
  • 6 heat a small amount of oil in a skillet over medium-high heat.
  • 7 drop about 2 tablespoons batter into the skillet; cook until golden brown (about 1 minute on each side, do not overcook in the skillet just until lightly browned).
  • 8 using a spatula transfer to baking sheet.
  • 9 continue with remaining batter (adjust heat to avoid burning the fritters).
  • 10 bake until puffed and firm to the touch (about 8-10 minutes).
