Banana Fritters

Ingredients
- 3/4 cup yellow cornmeal
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/8 teaspoon cayenne pepper, to taste (optional)
- 1 1/4 cups mashed bananas
- 1 large egg
- 2 tablespoons milk
- vegetable oil (for frying)
Recipe
- 1 set oven to 375 degrees.
- 2 spray a baking sheet with cooking spray.
- 3 in a bowl whisk together cornmeal, flour with baking powder, salt, cinnamon and cayenne pepper (if using).
- 4 in another bowl mix together banana with egg and milk.
- 5 add the cornmeal mixture to the banana mixture and stir until just combined.
- 6 heat a small amount of oil in a skillet over medium-high heat.
- 7 drop about 2 tablespoons batter into the skillet; cook until golden brown (about 1 minute on each side, do not overcook in the skillet just until lightly browned).
- 8 using a spatula transfer to baking sheet.
- 9 continue with remaining batter (adjust heat to avoid burning the fritters).
- 10 bake until puffed and firm to the touch (about 8-10 minutes).
