Bahn Mi Meatball Sandwich

Ingredients

- 2 lbs ground lamb
- 2 teaspoons ground pepper
- 1 teaspoon ground cinnamon
- 1 tablespoon sriracha sauce
- 2 teaspoons ground ginger
- 4 garlic cloves, minced
- 1/2 onion, finely chopped
- 1 lime, juiced
- 1/2 cup basil, roughly chopped
- 2 tablespoons hoisin sauce
- 1/2 tablespoon soy sauce
- 2 large carrots, trimmed peeled
- 3 jalapenos
- 1 cup cilantro, leaves removed
- 1 1/2 fresh french baguettes
- 1/4 cup plain greek yogurt
- 1/2 lime, juiced
- 2 teaspoons sriracha sauce
Recipe
- 1 preheat the oven to 400 degrees f.
- 2 mix the meat with the spices, garlic, onion, lime, basil, hoisin and soy sauce until evenly distributed. roll the meatballs into 1 inch diameter meatballs.
- 3 place in multiple glass baking dishes making sure the meatballs do not touch. cook until done all the way through (20 minutes).
- 4 while the meatballs are cooking, thinly slice the jalapeno and using a vegetable peeler, make thin ribbons of carrot.
- 5 in a small bowl, mix yogurt with sriracha sauce and lime juice.
- 6 cut the baguette into approximately 6 inch pieces. the full baguette should be 4 pieces while the half baguette should be two pieces. cut those pieces in half horizontally.
- 7 when meatballs are done, remove from oven and allow to cool for 5 minutes. just before the 5 minutes are done, use 1/6 (approx. 1 tbsp) of yogurt sauce to spread on each baguette piece.
- 8 place slices of carrot, jalapeno and some cilantro on inside bottom of baguette. place 3 meatballs on top. repeat for each sandwich.
- 9 serve immediately.
