Chickpea Soup

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 6 cups water
  • 2 (17 ounce) cans chickpeas (rinsed and drained)
  • 1 tablespoon olive oil
  • 2 teaspoons dried sage
  • 2 teaspoons dried rosemary
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 2 tablespoons finely chopped parsley

Recipe

  • 1 in a large pot, combine all ingredients except the parsley.
  • 2 bring the mixture to a boil over high heat, then lower the heat and simmer, partially covered, for 20 minutes.
  • 3 serve the soup garnished with the parsley.
