Blueberry, Zucchini And Banana Bread

Ingredients
- 3 eggs, lightly beaten
- 1/2 cup vegetable oil
- 3 teaspoons vanilla extract
- 1 teaspoon lemon juice
- 2 1/4 cups sugar
- 2 -3 ripe bananas, mashed
- 2 cups grated zucchini
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1 pint fresh blueberries
Recipe
- 1 preheat oven to 350 degrees. spray pam cooking oil in two loaf pans.
- 2 in a large bowl, beat together the eggs, oil, vanilla, bananas, lemon juice and sugar. in a different bowl, mix in the flour, salt, baking powder, baking soda, and cinnamon. begin incorporating the dry ingredients into the wet. add 1/4 of the dry ingredients into the wet and mix. when well mixed, add another 1/4th of the ingredients until all have been mixed together. gently fold in the blueberries. transfer to the prepared loaf pans.
- 3 bake 60 minutes in the preheated oven, or until a knife inserted in the center of a loaf comes out clean. cool 20 minutes in pans, then turn out onto wire racks to cool completely.
