Blueberry, Zucchini And Banana Bread

Ingredients

  • 3 eggs, lightly beaten
  • 1/2 cup vegetable oil
  • 3 teaspoons vanilla extract
  • 1 teaspoon lemon juice
  • 2 1/4 cups sugar
  • 2 -3 ripe bananas, mashed
  • 2 cups grated zucchini
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 pint fresh blueberries

Recipe

  • 1 preheat oven to 350 degrees. spray pam cooking oil in two loaf pans.
  • 2 in a large bowl, beat together the eggs, oil, vanilla, bananas, lemon juice and sugar. in a different bowl, mix in the flour, salt, baking powder, baking soda, and cinnamon. begin incorporating the dry ingredients into the wet. add 1/4 of the dry ingredients into the wet and mix. when well mixed, add another 1/4th of the ingredients until all have been mixed together. gently fold in the blueberries. transfer to the prepared loaf pans.
  • 3 bake 60 minutes in the preheated oven, or until a knife inserted in the center of a loaf comes out clean. cool 20 minutes in pans, then turn out onto wire racks to cool completely.
