Catalan Chicken

Ingredients
- Servings: 4
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne
- 1/4 teaspoon black pepper
- 4 chicken leg quarters
- 1 onion, chopped
- 5 garlic cloves, minced
- 2 tablespoons olive oil
- 3/4 cup spicy sausage, chopped
- 1 (14 ounce) can whole tomatoes, drained and chopped
- 1/2 cup red wine
- 1 cup olive, pitted and chopped
Recipe
- 1 combine salt, cumin, cinnamon, cayenne, and black pepper together.
- 2 rub over the surface of the chicken getting as much as you can under the skin.
- 3 preheat grill.
- 4 grill chicken pieces until the surface is browned (about 10 to 15 minutes).
- 5 meanwhile saute onion and garlic in olive oil.
- 6 add sausage and heat until warmed.
- 7 stir in tomatoes and red wine.
- 8 simmer on low.
- 9 add chicken quarters and turn to coat.
- 10 add olives and continue simmering for about 20 minutes.
- 11 serve by placing one piece of chicken on a plate.
- 12 pour sauce over chicken.
