Blueberry Banana Bread (lower Fat)

Ingredients
- 3 cups flour
- 1 tablespoon baking powder
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3/4 cup sugar
- 1/2 cup packed brown sugar
- 4 large bananas, mashed
- 4 tablespoons oil
- 2 teaspoons vanilla
- 2 eggs
- 1/3 cup milk
- 3 tablespoons milk
- 1/2 cup shredded coconut
- 1 cup chopped pecans
- 2 cups blueberries
Recipe
- 1 preheat the oven to 350.
- 2 whisk dry ingredients together except the sugar.
- 3 beat sugar, oil, vanilla, eggs, and milk together (all of the milk).
- 4 beat in bananas.
- 5 combine wet and dry and mix until combined well. fold in blueberries, pecans and coconut.
- 6 pour into 2 greased loaf pans.
- 7 bake 50-60 minutes.
- 8 cool on racks and store covered in the refrigerator.
