Blueberry Banana Bread (lower Fat)

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 3 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3/4 cup sugar
  • 1/2 cup packed brown sugar
  • 4 large bananas, mashed
  • 4 tablespoons oil
  • 2 teaspoons vanilla
  • 2 eggs
  • 1/3 cup milk
  • 3 tablespoons milk
  • 1/2 cup shredded coconut
  • 1 cup chopped pecans
  • 2 cups blueberries

Recipe

  • 1 preheat the oven to 350.
  • 2 whisk dry ingredients together except the sugar.
  • 3 beat sugar, oil, vanilla, eggs, and milk together (all of the milk).
  • 4 beat in bananas.
  • 5 combine wet and dry and mix until combined well. fold in blueberries, pecans and coconut.
  • 6 pour into 2 greased loaf pans.
  • 7 bake 50-60 minutes.
  • 8 cool on racks and store covered in the refrigerator.
