Apple Nut Bread

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 2 eggs
  • 1 cup sugar
  • 2/3 cup vegetable oil
  • 1/3 cup milk
  • 1 teaspoon vanilla
  • 2 cups chopped apples
  • 1/2 cup chopped walnuts
  • 2 tablespoons shredded coconut (optional)
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon

Recipe

  • 1 sift together dry ingredients. set aside.
  • 2 combine eggs, sugar, oil, milk, and vanilla in a large bowl.
  • 3 add flour mixture; mix gently.
  • 4 fold in apples, nuts and coconut.
  • 5 spoon into lightly greased 9x5 inch pan. sprinkle top with cinnamon and sugar which have been mixed together.
  • 6 bake 60 minutes at 350 degrees.
  • 7 cool in pan on wire rack 10 minutes. remove from pan and cool completely on rack.
  • 8 mix by hand to avoid overmixing and to insure a tender moist loaf.
