Cinnamon Banana Bread

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 1 cup mashed banana
  • 1/2 cup plain low-fat yogurt
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg

Recipe

  • 1 preheat oven to 350°f (or 325f for dark or non stick pans).
  • 2 grease and flour a 9x5-inch loaf pan or 12 muffin cups.
  • 3 beat egg.
  • 4 add sugar, oil, bananas and yogurt to beaten egg and beat with electric mixer until well combined.
  • 5 in a separate bowl, mix together dry ingredients.
  • 6 add dry ingredients to yogurt-banana mixture until combined.
  • 7 pour into pan and bake 60 minutes.
  • 8 let stand in pan five minutes and then remove and cool completely on a wire rack.
