Chicken Apple Salad Sandwich

Ingredients

  • 1 (7 1/2 ounce) package frozen cooked chicken breast strips, thawed
  • 1 large granny smith apple, peeled, cored, and chopped
  • 1/3 cup dried cranberries
  • 1 stalk celery, chopped
  • 1 green onion, sliced
  • 1/3 cup light mayonnaise
  • 1/3 cup light sour cream
  • 1 tablespoon lemon juice
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 8 slices whole wheat bread

Recipe

  • 1 in large bowl, shred chicken.
  • 2 add apple, cranberries, celery, and green onion.
  • 3 in a small bowl, combine mayo, sour cream, lemon juice, cinnamon, salt, and pepper.
  • 4 stir into chicken mixture.
  • 5 spoon onto 4 of the bread slices and top with remaining bread slices.
