Chicken Apple Salad Sandwich

Ingredients
- 1 (7 1/2 ounce) package frozen cooked chicken breast strips, thawed
- 1 large granny smith apple, peeled, cored, and chopped
- 1/3 cup dried cranberries
- 1 stalk celery, chopped
- 1 green onion, sliced
- 1/3 cup light mayonnaise
- 1/3 cup light sour cream
- 1 tablespoon lemon juice
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 8 slices whole wheat bread
Recipe
- 1 in large bowl, shred chicken.
- 2 add apple, cranberries, celery, and green onion.
- 3 in a small bowl, combine mayo, sour cream, lemon juice, cinnamon, salt, and pepper.
- 4 stir into chicken mixture.
- 5 spoon onto 4 of the bread slices and top with remaining bread slices.
