Chicken And Chickpeas Tagine

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 1 lb chicken breast
  • 1/2 large onion
  • 1 tablespoon garlic
  • 1 tablespoon fresh grated gingerroot
  • 1 teaspoon cumin
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon coriander
  • 1 dash cayenne pepper
  • 1 teaspoon turmeric
  • salt and pepper
  • 1/4 cup sliced green olives
  • 2 tablespoons fresh squeezed lemon juice
  • 1 (15 ounce) can chicken broth

Recipe

  • 1 dice chicken into bite-sized pieces and sautee until lightly browned over med high heat. add onion and sautee until translucent, add garlic, ginger and spices and saute for a couple more minutes. add olives, potatoes, lemon juice chicken broth and chickpeas. reduce heat to low and simmer 45 minutes or until potatoes are tender. serve over couscous.
