Chicken And Chickpeas Tagine

Ingredients
- 1 lb chicken breast
- 1/2 large onion
- 1 tablespoon garlic
- 1 tablespoon fresh grated gingerroot
- 1 teaspoon cumin
- 1/4 teaspoon cinnamon
- 1/4 teaspoon coriander
- 1 dash cayenne pepper
- 1 teaspoon turmeric
- salt and pepper
- 1/4 cup sliced green olives
- 2 tablespoons fresh squeezed lemon juice
- 1 (15 ounce) can chicken broth
Recipe
- 1 dice chicken into bite-sized pieces and sautee until lightly browned over med high heat. add onion and sautee until translucent, add garlic, ginger and spices and saute for a couple more minutes. add olives, potatoes, lemon juice chicken broth and chickpeas. reduce heat to low and simmer 45 minutes or until potatoes are tender. serve over couscous.
