Caramelized Onion-flavored Rice

Total Time: 50 mins Preparation Time: 25 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 2 cups basmati rice
  • 3 tablespoons vegetable oil
  • 2 bay leaves
  • 2 cinnamon sticks
  • 6 whole cloves
  • 3 large onions, sliced
  • 2 1/2 teaspoons salt

Recipe

  • 1 rice rice well, cover with 3 inches of water and soak for up to 2 hours.
  • 2 heat oil in a large saucepan.
  • 3 add bay leaves, cinnamon and cloves.
  • 4 saute until fragrant (about one minute).
  • 5 stir in onions.
  • 6 saute stirring frequently until caramelized (20 to 25 minutes).
  • 7 reduce heat as onions begin to color.
  • 8 add a spoonful of water to prevent burning if necessary.
  • 9 when the onions are caramelized, drain rice and add to onions.
  • 10 mix well.
  • 11 add 3 1/2 cups of water and salt.
  • 12 cover and bring to a boil over high heat.
  • 13 reduce heat to low, cover and cook for 25 minutes (without peeking).
  • 14 remove from heat, leave lid ajar to allow steam to escape.
  • 15 let rest for 5 minutes.
  • 16 fluff and serve.
