Caramelized Onion-flavored Rice

Ingredients

- 2 cups basmati rice
- 3 tablespoons vegetable oil
- 2 bay leaves
- 2 cinnamon sticks
- 6 whole cloves
- 3 large onions, sliced
- 2 1/2 teaspoons salt
Recipe
- 1 rice rice well, cover with 3 inches of water and soak for up to 2 hours.
- 2 heat oil in a large saucepan.
- 3 add bay leaves, cinnamon and cloves.
- 4 saute until fragrant (about one minute).
- 5 stir in onions.
- 6 saute stirring frequently until caramelized (20 to 25 minutes).
- 7 reduce heat as onions begin to color.
- 8 add a spoonful of water to prevent burning if necessary.
- 9 when the onions are caramelized, drain rice and add to onions.
- 10 mix well.
- 11 add 3 1/2 cups of water and salt.
- 12 cover and bring to a boil over high heat.
- 13 reduce heat to low, cover and cook for 25 minutes (without peeking).
- 14 remove from heat, leave lid ajar to allow steam to escape.
- 15 let rest for 5 minutes.
- 16 fluff and serve.
