Banana Zucchini Spelt Bread With Rainier Cherries

Ingredients

• 1 cup all-purpose flour
• 1 cup spelt flour
• 1 cup rolled oats
• 1 1/2 teaspoons baking powder
• 1 1/2 teaspoons baking soda
• 1 1/2 teaspoons salt
• 1 1/2 teaspoons cinnamon
• 1/4 teaspoon nutmeg
• 1 teaspoon salt
• 4 eggs
• 1 1/4 cups sugar
• 1/4 cup oil
• 1/2 cup applesauce
• 3 ripe mashed bananas
• 1 teaspoon vanilla
• 2 cups shredded zucchini
• 1 cup rainier dried cherries

Recipe

• 1 preheat oven to 350 degrees.
• 2 mix together flours, oats, baking soda, baking powder, cinnamon, nutmeg and salt.
• 3 in another bowl beat 4 eggs.
• 4 add the sugar, oil, applesauce, vanilla, and mashed banana to the eggs.
• 5 combine the west and dry mixtures.
• 6 stir untill combined.
• 7 fold in zucchini and stir in rainier cherries.
• 8 pour into two 2 greased loaf pans.
• 9 back untill golden brown and a toothpick comes out clean. approx 45 minutes.
