Chicken With Grapes And Apricots

Ingredients
- Servings: 4
- 2 kg chicken pieces
- 2 -3 tablespoons olive oil
- 1 onion, peeled and chopped
- 1 cinnamon stick
- 100 g seedless grapes, halved
- 100 g apricots, halved and stoned (can use dried)
- marinade
- 1 tablespoon runny honey
- 1 teaspoon grated fresh gingerroot
- 1 teaspoon cinnamon
- 1 teaspoon fresh ground black pepper
- 100 ml wine
Recipe
- 1 for the marinade- in a large bowl mix together the honey, ginger, cinnamon, pepper and wine, and stir.
- 2 rub all over the chicken pieces, cover and leave in fridge overnight.
- 3 drain, reserving the liquid.
- 4 heat the oil in a large skillet (one with a lid) and saute onion until golden.
- 5 add the chicken and brown all the pieces evenly.
- 6 add the chicken marinade and the cinnamon stick and simmer 40 minutes, reducing the liquid by half.
- 7 add the grapes and apricots, simmer with the lid on for a further 5-8 minutes, until chicken is cooked through.
- 8 remove cinnamon stick and serve hot.
