Caramelized Sweet Potatoes

Ingredients

- 1 lb sweet potato
- 1/4 cup butter
- 1/4 cup brown sugar or 1/4 cup maple syrup or 1/4 cup honey
- 2 tablespoons orange juice or 2 tablespoons pineapple juice
- 1/2 cup pineapple chunk (optional)
- 1 pinch ground cinnamon (optional) or 1 pinch nutmeg (optional) or 1 pinch pumpkin pie spice (optional)
Recipe
- 1 wash the sweet potatoes, but do not peel. boil them in a large pan of salted water until just tender, for about 30-45 minutes depending on their size. remove from the heat and drain well. cool slightly, then peel.
- 2 preheat the oven to 400°.
- 3 thickly slice the sweet potatoes and arrange in a single overlapping layer in a greased ovenproof dish. cut the butter into small cubes and dot them over the top.
- 4 sprinkle with the sugar, maple syrup or honey and the fruit juice. add the pineapple and spices, if using.
- 5 bake for 30-40 minutes, basting occasionally, until golden brown.
