Branana Bread

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup wheat bran
  • 1/3 cup granulated sugar
  • 1/4 cup flax seed, ground
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/4 cups bananas, mashed
  • 3/4 cup plain low-fat yogurt
  • 2 eggs
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 1/2 cup walnuts, chopped
  • 1/3 cup semi-sweet chocolate chips

Recipe

  • 1 preheat the oven to 350 degrees f.
  • 2 spray a 9" x 5" loaf pan with cooking spray and set aside.
  • 3 in a large bowl, combine the flour, bran, flaxseed, sugar, baking soda, baking powder, cinnamon and salt.
  • 4 in a medium bowl, whisk together the bananas, yogurt, eggs, butter and vanilla.
  • 5 add the wet ingredients to the dry ingredients and stir just until moistened.
  • 6 fold in the nuts and chocolate chips, being careful not to overmix the batter.
  • 7 spoon into the prepared pan and bake for 50 minutes, or until a wooden skewer inserted in the centre comes out clean.
  • 8 let cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
  • 9 wrap tightly with plastic wrap and store at room temperature.
