Branana Bread

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup wheat bran
- 1/3 cup granulated sugar
- 1/4 cup flax seed, ground
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 1/4 cups bananas, mashed
- 3/4 cup plain low-fat yogurt
- 2 eggs
- 2 tablespoons butter, melted
- 1 teaspoon vanilla
- 1/2 cup walnuts, chopped
- 1/3 cup semi-sweet chocolate chips
Recipe
- 1 preheat the oven to 350 degrees f.
- 2 spray a 9" x 5" loaf pan with cooking spray and set aside.
- 3 in a large bowl, combine the flour, bran, flaxseed, sugar, baking soda, baking powder, cinnamon and salt.
- 4 in a medium bowl, whisk together the bananas, yogurt, eggs, butter and vanilla.
- 5 add the wet ingredients to the dry ingredients and stir just until moistened.
- 6 fold in the nuts and chocolate chips, being careful not to overmix the batter.
- 7 spoon into the prepared pan and bake for 50 minutes, or until a wooden skewer inserted in the centre comes out clean.
- 8 let cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
- 9 wrap tightly with plastic wrap and store at room temperature.
