Banana-raisin Whole Wheat Bread, No-egg, No-oil

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 2 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons flax seed meal
  • 6 tablespoons water
  • 1/3 cup applesauce
  • 3 medium bananas (mashed)
  • 1 cup raisins
  • 2/3 cup plain nonfat yogurt
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 3/4 cup splenda brown sugar blend
  • 1 teaspoon vanilla
  • 1 teaspoon banana extract

Recipe

  • 1 grease bottom 9x5 loaf pan.
  • 2 mix the flax seed powder with 6 tbsp water. mix and sit for 30 sec.
  • 3 stir all ingredients and flax mixture together until blended.
  • 4 bake for 60-75 min at 350 degrees or until toothpick comes out clean.
  • 5 cool 10 minute.
  • 6 remove from pan and cool on wire rack.
