Chocolate Chip Scones

Ingredients
- 3 eggs
- 1 1/2 cups buttermilk
- 3 cups flour
- 3/4 cup brown sugar
- 1 cup rolled oats
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 4 teaspoons baking powder
- 3/4 cup butter, chilled
- 1 cup mini chocolate chip
Recipe
- 1 in a bowl, whisk together the eggs and buttermilk.
- 2 set aside.
- 3 in a large bowl, combine flour, sugar, oats, salt, baking soda, cinnamon and baking powder.
- 4 cut in the cold butter until mixture resembles coarse meal.
- 5 add chocolate chips and mix.
- 6 gently stir in the egg/buttermilk mixture and stir just until soft dough forms. don't overmix.
- 7 using a cookie scoop, drop dough about 2 inches apart onto well greased baking sheets. i put 12 on a sheet and use four sheets for a full batch.
- 8 bake at 375 degrees for 7 minutes.
- 9 rotate pans and bake another 5-7 minutes.
- 10 serve warm or cooled.
- 11 will keep for several days if kept in an air tight container.
