Breakfast Muffin Bars

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups all-bran cereal
  • 1/3 cup sesame seeds
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 1 egg
  • 3/4 cup buttermilk
  • 1/2 cup packed brown sugar
  • 1/3 cup vegetable oil
  • 2 tablespoons molasses
  • 1 1/2 cups finely grated carrots
  • 1/2 cup chopped dates

Recipe

  • 1 mix flour, cereal, sesame seeds, baking powder, cinnamon, allspice, baking soda and salt in large bowl.
  • 2 whisk together egg, buttermilk, brown sugar, vegetable oil and molasses.
  • 3 stir liquid mixture into dry ingredients, stirring just until moistened.
  • 4 fold in carrots and dates.
  • 5 spread evenly in greased 13 x 9 inch baking pan.
  • 6 bake at 350°f for 25 to 30 minutes or until centre springs back when gently touched.
  • 7 cool on rack.
  • 8 cut into bars.
  • 9 store in airtight container.
