Chicken In Pineapple-orange Sauce

Ingredients

- chicken piece
- 1 tablespoon paprika
- oil (for frying)
- salt and pepper
- 2 -3 minced garlic cloves
- 1 cup tomato sauce
- 1 (6 ounce) can frozen concentrated orange juice, divided
- 1/4 cup brown sugar
- 1/2 teaspoon mustard powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1 (14 ounce) can pineapple chunks, reserve the liquid
Recipe
- 1 set oven to 350 degrees.
- 2 grease a med-size roasting pan.
- 3 sprinkle chicken pieces with salt, pepper and paprika.
- 4 brown lightly on both sides.
- 5 place browned chicken pieces in roasting pan.
- 6 in a bowl, mix together, the tomato sauce, orange juice, brown sugar, seasonings and 1/2 cup juice from the canned pineapple.
- 7 pour over chicken pieces.
- 8 bake, covered for approx 30 mins, uncover, and bake for another 30 mins, or until chicken is cooked, basting occasionally.
- 9 add drained pineapple chunks, 5 mins before removing from oven.
- 10 note: if sauce cooks down too much, add pineapple juice.
- 11 serve with rice.
