Chicken In Pineapple-orange Sauce

Ingredients

  • Servings: 4
  • chicken piece
  • 1 tablespoon paprika
  • oil (for frying)
  • salt and pepper
  • 2 -3 minced garlic cloves
  • 1 cup tomato sauce
  • 1 (6 ounce) can frozen concentrated orange juice, divided
  • 1/4 cup brown sugar
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1 (14 ounce) can pineapple chunks, reserve the liquid

Recipe

  • 1 set oven to 350 degrees.
  • 2 grease a med-size roasting pan.
  • 3 sprinkle chicken pieces with salt, pepper and paprika.
  • 4 brown lightly on both sides.
  • 5 place browned chicken pieces in roasting pan.
  • 6 in a bowl, mix together, the tomato sauce, orange juice, brown sugar, seasonings and 1/2 cup juice from the canned pineapple.
  • 7 pour over chicken pieces.
  • 8 bake, covered for approx 30 mins, uncover, and bake for another 30 mins, or until chicken is cooked, basting occasionally.
  • 9 add drained pineapple chunks, 5 mins before removing from oven.
  • 10 note: if sauce cooks down too much, add pineapple juice.
  • 11 serve with rice.
