Chili Sauce Ii

Ingredients

  • 13 lbs tomatoes
  • 1 tablespoon dry mustard
  • 1 lb celery
  • 2 cinnamon sticks
  • 1 quart onion, chopped
  • 2 lbs brown sugar
  • 3 green peppers
  • 1/4 cup salt
  • 1/2 tablespoon clove, ground
  • 1 quart cider vinegar

Recipe

  • 1 scald, then peel tomatoes; cook 15 minutes.
  • 2 drain off half juice.
  • 3 chop remaining vegetables; add tomatoes; simmer about 90 minutes.
  • 4 tie spices in cloth bag.
  • 5 add bag of spices and remaining ingredients to tomato mixture.
  • 6 continue cooking 90 minutes.
  • 7 remove bag of spices; seal mixture in hot, sterilized jars.
