Chewy Chocolate Cherry Cookies

Ingredients
- 1 1/3-1 1/2 cups unsalted butter, melted and slightly cooled
- 3 cups brown sugar
- 2 large eggs
- 1/4 cup honey
- 2 teaspoons vanilla
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 cup old fashioned oats
- 3 1/2 cups flour
- 6 ounces dried cherries
- 1 cup toasted pecans, chopped
- 2 1/4 ounces dark chocolate
Recipe
- 1 preheat oven to 350°.
- 2 toast pecans on foil lined baking sheet for about 5-7 minutes.
- 3 remove nuts from oven as soon as they start to smell toasted, remove nuts from pan and set aside.
- 4 coarsely chop chocolate bars and set aside.
- 5 in a large bowl, with mixer on medium speed, cream butter and brown sugar.
- 6 add eggs, honey, cinnamon and vanilla, mix throughly.
- 7 add flour, oats and baking soda, mixing together on low speed.
- 8 stir in cherries, nuts and chocolate with a wooden spoon.
- 9 drop batter by rounded tablespoons on to two ungreased baking sheets, leave at least 2 inches between each cookie (they will spread).
- 10 bake at 350°f for about 10 to 12 minutes.
- 11 do not over bake - cookies will be chewier if slightly underdone.
- 12 let cookies rest on pan for 1 minute, then transfer to wire rack to cool completely.
