Chewy Chocolate Cherry Cookies

Total Time: 55 mins Preparation Time: 45 mins Cook Time: 10 mins

Ingredients

  • 1 1/3-1 1/2 cups unsalted butter, melted and slightly cooled
  • 3 cups brown sugar
  • 2 large eggs
  • 1/4 cup honey
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 cup old fashioned oats
  • 3 1/2 cups flour
  • 6 ounces dried cherries
  • 1 cup toasted pecans, chopped
  • 2 1/4 ounces dark chocolate

Recipe

  • 1 preheat oven to 350°.
  • 2 toast pecans on foil lined baking sheet for about 5-7 minutes.
  • 3 remove nuts from oven as soon as they start to smell toasted, remove nuts from pan and set aside.
  • 4 coarsely chop chocolate bars and set aside.
  • 5 in a large bowl, with mixer on medium speed, cream butter and brown sugar.
  • 6 add eggs, honey, cinnamon and vanilla, mix throughly.
  • 7 add flour, oats and baking soda, mixing together on low speed.
  • 8 stir in cherries, nuts and chocolate with a wooden spoon.
  • 9 drop batter by rounded tablespoons on to two ungreased baking sheets, leave at least 2 inches between each cookie (they will spread).
  • 10 bake at 350°f for about 10 to 12 minutes.
  • 11 do not over bake - cookies will be chewier if slightly underdone.
  • 12 let cookies rest on pan for 1 minute, then transfer to wire rack to cool completely.
  • 13 store in airtight container.
