Cherry-almond Glazed Lamb Loin

Ingredients

- 3 -4 lbs lamb loin
- 1 (12 ounce) jar cherry preserves
- 2 tablespoons light corn syrup
- 1/4 cup red wine vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon clove
- 3 tablespoons toasted slivered almonds
Recipe
- 1 roast lamb loin on rack in shallow baking pan, uncovered at 325 for 2 to 2 and 1/2 hours.
- 2 in a saucepan, combine cherry preserves, corn syrup, vinegar, salt, cinnamon, nutmeg and cloves.
- 3 heat to boiling, stirring frequently.
- 4 reduce heat, simmer 2 minutes and add toasted almonds.
- 5 keep sauce warm.
- 6 spoon hot sauce over cooked meat.
- 7 return to the oven about 30 minutes or until meat thermometer measures 170°f.
- 8 baste meat with sauce several times during the 30 minutes.
- 9 serve remaining sauce with meat.
