Cape Cod Oatmeal Cookies

Total Time: 17 mins Preparation Time: 5 mins Cook Time: 12 mins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 1 egg, lightly beaten
  • 1 cup sugar
  • 1/2 cup melted butter
  • 1/2 cup melted shortening
  • 1 tablespoon molasses
  • 1/4 cup milk
  • 1 3/4 cups oatmeal
  • 1/2 cup chopped pecans
  • 1/2 cup raisins (optional)

Recipe

  • 1 preheat oven to 350*.
  • 2 in a medium sized bowl, sift together the flour, soda, salt and cinnamon.
  • 3 in a large bowl, combine remaining ingredients.
  • 4 incorporate flour mixture into oat mixture (with wooden spoon) until well blended.
  • 5 drop cookie dough by teaspoon onto greased cookie sheets.
  • 6 bake for approx.
  • 7 12 minutes, or until the edges turn slightly brown.
  • 8 cool on wire racks.
  • 9 store in tightly covered container.
