Chewy Fruit & Nut Bar Cookies

Ingredients

- 1/2 cup packed brown sugar
- 1/2 cup sugar substitute
- 1 (8 ounce) container non-fat vanilla yogurt
- 1/2 cup egg substitute
- 2 tablespoons canola oil
- 2 tablespoons nonfat milk
- 2 teaspoons vanilla
- 1 1/4 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon salt
- 3 cups oatmeal, uncooked (old-fashioned or quick)
- 1/2 cup dried apricot, diced
- 1/2 cup dried plum, diced
- 1 cup walnuts
Recipe
- 1 in a large bowl, combine sugars, yogurt, egg substitute, oil, milk and vanilla.
- 2 blend well.
- 3 in a medium bowl, combine flour, baking soda, cinnamon, cardamom, and salt.
- 4 blend well.
- 5 add to liquid mixture and mix well.
- 6 stir in oats, fruit& nuts, blending well.
- 7 spread dough into ungreased 9x13 pan.
- 8 bake in preheated 350 degree oven for 30 minutes or until lightly browned.
- 9 cool completely.
- 10 cut into bars and store in a tightly covered container.
