Chewy Fruit & Nut Bar Cookies

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 24
  • 1/2 cup packed brown sugar
  • 1/2 cup sugar substitute
  • 1 (8 ounce) container non-fat vanilla yogurt
  • 1/2 cup egg substitute
  • 2 tablespoons canola oil
  • 2 tablespoons nonfat milk
  • 2 teaspoons vanilla
  • 1 1/4 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 3 cups oatmeal, uncooked (old-fashioned or quick)
  • 1/2 cup dried apricot, diced
  • 1/2 cup dried plum, diced
  • 1 cup walnuts

Recipe

  • 1 in a large bowl, combine sugars, yogurt, egg substitute, oil, milk and vanilla.
  • 2 blend well.
  • 3 in a medium bowl, combine flour, baking soda, cinnamon, cardamom, and salt.
  • 4 blend well.
  • 5 add to liquid mixture and mix well.
  • 6 stir in oats, fruit& nuts, blending well.
  • 7 spread dough into ungreased 9x13 pan.
  • 8 bake in preheated 350 degree oven for 30 minutes or until lightly browned.
  • 9 cool completely.
  • 10 cut into bars and store in a tightly covered container.
