Chewy Cranberry Cookies (low Fat)

Total Time: 29 mins Preparation Time: 15 mins Cook Time: 14 mins

Ingredients

  • 1 cup sugar
  • 1/4 cup low fat margarine, softened
  • 1/4 cup frozen apple juice concentrate, thawed
  • 2 egg whites
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups unbleached flour
  • 1 cup quick-cooking oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 2 cups dried cranberries, coarsely chopped
  • 1/2 cup chopped walnuts (optional)

Recipe

  • 1 *don't dilute applejuice.
  • 2 preheat oven to 350f and lightly grease cookie sheets.
  • 3 in a large bowl, cream margarine and sugar until well blended. add apple juice concentrate, egg whites, and vanilla; beat well.
  • 4 in a medium bowl, combine the flour, oats, baking powder, baking soda, & cinnamon. gradually add to creamed mix. until a soft dough forms. stir in cranberries (and walnuts if using) .
  • 5 drop by level tablespoons onto cookie sheets-1 inch apart-bake for 14 minutes or until lightly browned. remove to cooling rack.
  • 6 enjoy with a glass of low fat milk or hot chocolate!
