Chewy Cranberry Cookies (low Fat)

Ingredients
- 1 cup sugar
- 1/4 cup low fat margarine, softened
- 1/4 cup frozen apple juice concentrate, thawed
- 2 egg whites
- 1 1/2 teaspoons vanilla
- 1 1/2 cups unbleached flour
- 1 cup quick-cooking oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 2 cups dried cranberries, coarsely chopped
- 1/2 cup chopped walnuts (optional)
Recipe
- 1 *don't dilute applejuice.
- 2 preheat oven to 350f and lightly grease cookie sheets.
- 3 in a large bowl, cream margarine and sugar until well blended. add apple juice concentrate, egg whites, and vanilla; beat well.
- 4 in a medium bowl, combine the flour, oats, baking powder, baking soda, & cinnamon. gradually add to creamed mix. until a soft dough forms. stir in cranberries (and walnuts if using) .
- 5 drop by level tablespoons onto cookie sheets-1 inch apart-bake for 14 minutes or until lightly browned. remove to cooling rack.
- 6 enjoy with a glass of low fat milk or hot chocolate!
