Banana Oatmeal Muffins

Total Time: 28 mins Preparation Time: 10 mins Cook Time: 18 mins

Ingredients

  • 2 cups flour
  • 1 cup quick-cooking oats
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 1/2 cups bananas, mashed (about 3)
  • 2 eggs
  • 1/3 cup margarine, melted
  • 1 teaspoon vanilla

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 stir together flour, oatmeal, brown sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
  • 3 in a separate bowl, combine the mashed bananas, eggs and melted better.
  • 4 add the banana mixture to the flour mixture, stirring just until blended.
  • 5 spoon batter into greased or papered muffin tins. bake for 12 to 15 minutes (usually the 15 minutes, possibly more) or until a toothpick inserted into center muffin comesout clean.
  • 6 let cool in pan on wire rack for 10 minutes and then remove from pan and allow to cool on wire rack.
  • 7 i usually get 16 muffins but the original yield is 12.
