Banana Oatmeal Muffins

Ingredients
- 2 cups flour
- 1 cup quick-cooking oats
- 1 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 1/2 cups bananas, mashed (about 3)
- 2 eggs
- 1/3 cup margarine, melted
- 1 teaspoon vanilla
Recipe
- 1 preheat oven to 375 degrees.
- 2 stir together flour, oatmeal, brown sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
- 3 in a separate bowl, combine the mashed bananas, eggs and melted better.
- 4 add the banana mixture to the flour mixture, stirring just until blended.
- 5 spoon batter into greased or papered muffin tins. bake for 12 to 15 minutes (usually the 15 minutes, possibly more) or until a toothpick inserted into center muffin comesout clean.
- 6 let cool in pan on wire rack for 10 minutes and then remove from pan and allow to cool on wire rack.
- 7 i usually get 16 muffins but the original yield is 12.
