Candied Ginger - Cardamom Bars

Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 1/2 teaspoons ground cardamom
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup chilled unsalted butter
- 1 egg
- 4 1/2 ounces crystallized ginger
Recipe
- 1 preheat oven to 350 deg f.
- 2 grease a 9 inch square baking pan.
- 3 ok here is the hardest part -- finely chop crystallized ginger and set aside.
- 4 in a food processor add flour, sugar, cardamom, cinnamon, and salt. pulse to combine.
- 5 cut butter into half in cubes.
- 6 add butter to processor and mix into a coarse meal forms.
- 7 beat egg and add 2 tablespoons to processor and mix until a moist crumbs form.
- 8 add ginger and blend until moist clumps form.
- 9 press dough into pan.
- 10 brush the rest of the egg over the top.
- 11 bake 40 minutes.
- 12 transfer to rack and let cool completely in pan.
- 13 cut into 18 pieces.
