Candied Ginger - Cardamom Bars

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons ground cardamom
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup chilled unsalted butter
  • 1 egg
  • 4 1/2 ounces crystallized ginger

Recipe

  • 1 preheat oven to 350 deg f.
  • 2 grease a 9 inch square baking pan.
  • 3 ok here is the hardest part -- finely chop crystallized ginger and set aside.
  • 4 in a food processor add flour, sugar, cardamom, cinnamon, and salt. pulse to combine.
  • 5 cut butter into half in cubes.
  • 6 add butter to processor and mix into a coarse meal forms.
  • 7 beat egg and add 2 tablespoons to processor and mix until a moist crumbs form.
  • 8 add ginger and blend until moist clumps form.
  • 9 press dough into pan.
  • 10 brush the rest of the egg over the top.
  • 11 bake 40 minutes.
  • 12 transfer to rack and let cool completely in pan.
  • 13 cut into 18 pieces.
