Cinnamon Crusted/roasted Almonds

Ingredients
- 1 egg
- 2 teaspoons vanilla
- 3 cups whole almonds
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
Recipe
- 1 preheat oven to 250 degrees f.
- 2 lightly grease large cookie pan or line with parchment paper for easy cleanup.
- 3 lightly beat the egg , add vanilla, and beat until frothy but not stiff.
- 4 add the nuts, and stir until well coated.
- 5 mix the sugar, salt, and cinnamon, and sprinkle over the nuts.
- 6 toss to coat, and spread evenly on the prepared pan.
- 7 bake for 1 hour and 15 minutes in the preheated oven, stirring about every 20 minutes or so, until golden.
- 8 allow to cool, then store nuts in airtight containers.
