Cinnamon Crusted/roasted Almonds

Total Time: 1 hr 29 mins Preparation Time: 5 mins Cook Time: 1 hr 24 mins

Ingredients

  • 1 egg
  • 2 teaspoons vanilla
  • 3 cups whole almonds
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon

Recipe

  • 1 preheat oven to 250 degrees f.
  • 2 lightly grease large cookie pan or line with parchment paper for easy cleanup.
  • 3 lightly beat the egg , add vanilla, and beat until frothy but not stiff.
  • 4 add the nuts, and stir until well coated.
  • 5 mix the sugar, salt, and cinnamon, and sprinkle over the nuts.
  • 6 toss to coat, and spread evenly on the prepared pan.
  • 7 bake for 1 hour and 15 minutes in the preheated oven, stirring about every 20 minutes or so, until golden.
  • 8 allow to cool, then store nuts in airtight containers.
