- 3 lbs chicken, cut up
- 1 tablespoon cinnamon
- 2 tablespoons sugar
- 1 teaspoon fresh ground pepper
- 3/4 teaspoon dried oregano
- 1 1/2 teaspoons salt
- 1 1/2 cups flour
- vegetable oil
Recipe
- 1 place chicken pieces in a baking dish. mix cinnamon, sugar, pepper, oregano and salt in a small bowl.
- 2 sprinkle over chicken, coating both sides. cover chicken and refrigerate at least 1 hour.
- 3 dredge chicken in flour, shake off excess.
- 4 in a large saucepan, heat 2 inches of oil to 375. fry chicken in batches, without crowding, turning, until browned on the outside and tender and cooked through. about 25 minutes.
