Banana Nut Muffins

Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup chopped walnuts
- 1/2 cup toasted wheat germ
- 1/2 cup brown sugar
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 2 ripe bananas, mashed
- 3/4 cup milk
- 5 tablespoons melted butter
- 1 egg
- cinnamon sugar (optional)
Recipe
- 1 preheat oven to 400f.
- 2 fit 12 muffin cups with paper liners.
- 3 coat each with cookng spray.
- 4 mix flour, walnuts, wheat germ, brown sugar, baking powder, cinnamon, salt, and nutmeg in large bowl.
- 5 stir in bananas, milk, butter, and egg.
- 6 mix just until blended.
- 7 using an ice cream scoop, fill muffin cups evenly with batter.
- 8 sprinkle with cinnamon sugar, if desired.
- 9 bake muffins until a skewer inserted into centers comes out clean, 20-22 minutes.
- 10 cool 1 minute, then remove from the muffin pan and cool on a wire rack.
