Banana Nut Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup chopped walnuts
  • 1/2 cup toasted wheat germ
  • 1/2 cup brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 2 ripe bananas, mashed
  • 3/4 cup milk
  • 5 tablespoons melted butter
  • 1 egg
  • cinnamon sugar (optional)

Recipe

  • 1 preheat oven to 400f.
  • 2 fit 12 muffin cups with paper liners.
  • 3 coat each with cookng spray.
  • 4 mix flour, walnuts, wheat germ, brown sugar, baking powder, cinnamon, salt, and nutmeg in large bowl.
  • 5 stir in bananas, milk, butter, and egg.
  • 6 mix just until blended.
  • 7 using an ice cream scoop, fill muffin cups evenly with batter.
  • 8 sprinkle with cinnamon sugar, if desired.
  • 9 bake muffins until a skewer inserted into centers comes out clean, 20-22 minutes.
  • 10 cool 1 minute, then remove from the muffin pan and cool on a wire rack.
