Chunky Autumn Chili

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • 1 roma tomato, diced
  • 1/2 apple, cubed
  • 1/2 teaspoon garlic, minced
  • 1/4 red onion, chopped
  • 1/2 cup lamb chop, cubed
  • 1 pinch chili powder
  • 1 pinch ground cumin
  • 1 teaspoon cinnamon
  • 2 tablespoons butternut squash, cubed
  • 1/2 green bell pepper, chopped
  • 1/4 cup fresh cilantro, chopped

Recipe

  • 1 cook tomato, apple, garlic, and onion in a large saucepan until softened.
  • 2 add lamb and seasonings; cover and simmer, stirring occasionaly, for 20 minutes.
  • 3 stir in squash and pepper; simmer, stirring occasionaly, for an additional 15 minutes.
  • 4 stir in cilantro and serve.
  • 5 enjoy!
