Butternut Squash Butter

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • 9 cups butternut squash puree
  • 1 1/2 cups undiluted unsweetened apple juice concentrate
  • 2 1/4 cups dark brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves

Recipe

  • 1 place all ingredients in large, heavy bottom pot.
  • 2 heat to boiling.
  • 3 reduce heat, simmer 40-45 minutes, stirring frequently to prevent sticking.
  • 4 to test if done, a dollop placed on a plate will not run after 2 minutes.
  • 5 pack into clean jars, cover and refrigerate or freeze.
